								16 KEEPING YOUR ICE 
								CREAM COLD WITH DRY ICE 1. Keep dry ice directly on 
								top of your ice cream. Cold air is heavier than 
								warm air and it will seep
 to the bottom.
 2. Load your back box as 
								low as possible.   3. Cover the load with 
								cardboard or an insulation blanket.  After putting dry ice on 
								your load, cover it for
 extra insulation.
 4. Put ice chips directly 
								on top of the softest items.  Items such as fudgesicles, 
								and ice cream bars are
 the easiest and first to 
								melt.  Take extra care by
 loading these items 
								toward the back of your back
 box, and putting bare ice 
								chips directly on top of
 these items in the front 
								box.
 5. Keep the front box lid 
								closed tightly.  Do not allow customers to 
								open the front box.
 This causes ice cream and 
								dry ice to melt more rapidly.
   6.Never sell or give 
								dry ice to children.  You need all of your dry 
								ice to keep your ice cream
 cold. Dry ice can cause 
								serious burns and is not
 something to play with.  
								If someone wants to buy
 dry ice, give them the 
								shop number and tell them
 they can buy it there.
 7. Check your ice cream 
								throughout the day.   |
